Idaho Potato Cake

• 1 cup butter
• 2 cups sugar
• 2 eggs
• 1 cup cold mashed potatoes
• 1 teaspoon vanilla
• 2 cups flour
• 1/3 cup cocoa
• 1 teaspoon soda
• 1 cup mild
• 1 cup chopped nuts (optional)

Cream the butter and sugar until fluffy, and add the eggs one at a time, blending well. Blend in potatoes and vanilla. Add milk and blend. Combine the dry ingredients and add to the mix, blending well. Then add nuts. Pour into greased 9 by 13 inch pan and bake at 350 degrees for 40 - 45 minutes. Cool this cake a lot like brownies only a cake.
